Sloppy Joe Casserole

8 ounces Macaroni salad shell

1 small sloppy joe mix envelope

1 1/4 cups ground beef or ground turkey, cooked

8 ounces tomato sauce

6 ounces tomato paste

1 cup water

16 ounces cottage cheese

1 cup shredded cheddar cheese

Assembly Directions: Cook the macaroni half the recommended time. Drain. Combine macaroni with ground beef or turkey, tomato sauce, tomato paste and 1 cup water. In sprayed 2 1/2 quart casserole dish or 8x8 baking dish layer half the macaroni, half the cottage cheese and half the meat sauce then repeat. Top with shredded cheddar cheese. Wrap dish in freezer paper, foil or place dish in 2 gallon Ziploc bag. Label and freeze.

To serve: thaw and bake uncovered at 350 degrees for 40 to 50 minutes or until bubbling OR place frozen casserole into oven and bake for 1 hour and 20 minutes.

NOTES : My notes: I use elbow macaroni- it looks more like mac and cheese. I mix all ingredients into a Ziploc bag. I hate using baking dishes in my freezer and I like to make 6 batches of this at one time so I had to use an alternative method. We like the taste of the dish when mixed and don't miss the layers at all.
