Chinese Chicken and Noodles

1 pound uncooked linguine

2 tablespoons peanut oil

4 garlic cloves -- minced

1/2 cup sesame seeds

1/2 cup vegetable oil

1/2 cup sugar

1/3 cup white vinegar

3 tablespoons soy sauce

1 tablespoon crushed red pepper

2 cups cooked chicken chunks

4 scallions -- chopped

Prepare linguine according to the package directions. Drain noodles, rinse, and then drain again. Place noodles in a covered dish to keep warm. Heat peanut oil in a large skillet over medium heat. Add the garlic and sesame seeds and sauté for 3 to 5 minutes, or until the seeds are golden brown. Reduce the heat to medium-low; add the vegetable oil, sugar, vinegar, soy sauce, crushed red pepper, and chicken chunks and heat for about 2 minutes. Add to the linguine and toss until well combined. Sprinkle with the chopped scallions and serve immediately, or cover and chill until ready to serve. Serve cold or warm.
