Barbecue Chicken Pizza

1 package (10 ounces) refrigerated pizza crust
1 1/2 cups (6 ounces) shredded Colby Jack Cheese, divided
2 cups chopped cooked chicken
1/2 cup barbecue sauce
1/4 cup red onion sliced

Preheat oven to 425 degrees F. Roll pizza crust into a 12 inch circle on a 13 " baking stone or a 13 " pizza pan. Sprinkle crust with 3/4 cup cheese.

In 1 quart mixing  bowl combine chicken and barbecue sauce until chicken is coated. thinly slice red onion with food processor or Pampered Chef Vario-Slicer. Top crust with chicken mixture and red onions. Top with remaining cheese. Bake 15 to 20 minutes or until the crust is a golden brown color.

Yield 8 servings
