Creating a Chicken PlanI find it hard to use someone else's plan and so instead of giving you a plan I am going to give you suggestions and recipes to create your own chicken plan. See the leftover chicken page for recipes that use fresh leftover chicken or pre-cooked chicken that has been bagged and placed into your freezer until you are ready to use it. Decide how much chicken you want to cook and the recipes that you will use. Several factors can help you make the decision about how much chicken to cook, like the amount of time you want to spend cooking or the amount of chicken you can purchase on sale. I prefer to make recipes in batches of 6 when I cook them, however, I only recommend this if you have tried the recipes and know that your family likes them. For recipes that call for diced pre-cooked chicken I follow advice from Robbyn who owns the Friendly Freezer list server. Buy one or two 10 pound bags of chicken quarters (any other chicken will do but quarters are cheap!) 1 bag will fit in a large crock pot but if you have two bags you will have to use a big stock pot. Add celery tops, onion peelings and tops and bottoms, some garlic powder or cloves and a carrot, cover with water and heat to a simmer. Cover the crock pot or stock pot and head to bed (about midnight or later for me). If you are ambitious, get up in about 4 hours and turn it off. By morning it will be cool enough to de-bone. After de-boning, put the skin and bones in a crock pot and cook for my broth. Package the chicken in 2 cup portions, place in Ziploc bags, label and place in the freezer. |
